Chocolate Thursday

Wednesday and Thursday are the worst.. All we want is chocolate!!!! I have been fixing my chocolate cravings with a few treats.

Brookstone Chocolate covered Pomegranates make a great snack in the evenings after dinner. You can have 10 of them for only 90 calories. They are dark chocolate and pomegranate which are both high in antioxidents.



Kashi Go- Lean bars- These are the most common chocolate fix for me because I eat them for breakfast and lunch. They have so many different flavors that I don't get tired of them and they are all dipped in chocolate. (Most of them have chocolate chips in them). These are high in Fiber and they have 9 grams of protein at only 180 calories per bar- you can't get a better chocolate fix than this! Kashi has a lot of great treats, chocolate, granola and breakfast bars. They are a great company and tend to stay true to their "LEAN" advertisements!
Tonight I made a recipe that is FABULOUS!!! It came from Healthy living magazine. It is a chocolate and peanut butter fudge recipe. It is only 123 calories per serving. 3.5 g Fiber.

1 (14oz.) can Fat Free sweetened condensed milk, divided.            3/4 c. choco chip chips

2 TBS unsweet dark cocoa powder                                                  1/4 tsp instant coffee

1 tsp vanilla extract, divided                                                             3/4 c peanut butter chips

1/4 c. salted peanuts chopped (optional)                                           1 TBS Peanut Butter

1. Line an 8 inch square pan with wax paper. Place 9 TBS of sweet milk in a microwave safe bowl. Add choc chips, cocoa and coffee. Microwave on high for 1 min. Add 1/2 tsp vanilla. Spread into pan.

2. Combine the remaining milk, peanut butter chips in Microwave safe bowl. Microwave on high for 1 minute. Stir in Vanilla. Spread evenly over chocolate layer. Sprinkle peanuts on top. Cover and chill for 2 hours. Cut into 25 pieces. *I left off the peanuts and left out the peanut butter  to lighten the calorie load but you can add it and it is only 123 calories per piece*
YUMMMM!



Who doesn't love a healthy way to enjoy chocolate!
*Hope you can resist eating the whole pan. I usually save 3 treats at home and then take the rest to my teacher friends or send them to work with my husband for his friends.
