Lazy Saturday Salsa Chicken lunch and Chicken Soup dinner

                                Salsa Chicken
For Lunch we took some leftover Rosemary baked chicken and topped it with some Trader Joe's organic Salsa. We added a salad and some fresh strawberries and egg crumble, a little balsamic and enjoyed a quiet lunch by the wood stove! 







Kimberly’s Classic Homemade Chicken Soup
Ingredients:
·         4 lg. boneless, skinless chicken breasts (do not slice)
·         1 32.oz box of Chicken broth- (I use Trader Joes Free Range, Organic)
·         6 cloves minced garlic
·         1 small bag of Green Beans (fresh or Frozen) Cut them in half for manageable soup pieces.
·         *If non paleo- you could use the vegetable medley mix with corn, carrots and beans*
·         2 c. Cut Carrots
·         2 C. Celery (If you are not a fan of celery just use two whole stalks for cooking and then remove)
·         1 tsp. Parsley
·         1 TBS Sea Salt
·         Cracked Pepper to taste
Process:
Cut vegetables, chop garlic and get out all of your ingredients.
Put all of the ingredients in your Crock-pot .
Once your ingredients are in the Crock- pot, fill the crock pot up to the half- way mark with water.
Cook for 8 hours on low heat and enjoy the smells in your home!
After 8 hours, remove chicken breasts from Crock-Pot with tongs and cut into bite size pieces. Return to the crock pot for another 20 minutes or until you are ready to serve. Enjoy!
*If non paleo- add rice or noodles for thicker soup.  Try whole wheat noodles, Brown or Wild rice for a healthier option.* Primal eating allows wild rice as well!
